Excelsa Coffee is authentic coffee from traditional coffee farm in the city of Pagar Alam, South Sumatera, Indonesia. The city is located at the hilly ground with quite low temperature for the whole year (about 22,91 C according to hperkotaan.bpiw.pu.go.id) It has one mountain (Dempo) and seven rivers (according to Wikipedia.) The city has wide area of green forest which protecting many ecosystems including Sumatran tigers, golden cats and forest goats.

Mr. Jeffry informed that the harvest season for Excelsa is from June to August. The excelsa is currently still undervalue than other coffee's families. He asked for improving and promoting this excelsa from Pagar Alam.

Kamus Kopi reviewed it with SCAA cupping protocol. The cupping notes were cinnamon, palm sugar, earthy, hint of fruit, medium:acidity, medium low:body, short lingering, hint of herbal:after taste.

Steve brewed it again with Suji dripper with paper filter. He asked Chery to join the review. Chery noticed the fruity, acidity and easy to drink from the excelsa. With that Steve confirmed his cupping. But overall, the excelsa Pagar Alam has potential to be fine coffee. The Kamus Kopi score was 88

Bali Wanagiri arabica natural - House Barista - 12 Jan 2022

Kamus Kopi received special coffees, Bali Wanagiri arabica from House Barista ID.

Bali Wanagiri arabica is authentic coffee from "forest" coffee farm in the district of Buleleng, Balu, Indonesia. Wanagiri village is located about 1220 masl. The district Buleleng itself is located at the northest of Bali island. The main crops from Buleleng are salak (snake fruit), jeruk keprok (mandarin cirtus.) And the name of Wanagiri itself is a combination of two words. Wana means forest. and Giri means hill. (according to Wikipedia.) Besides that, there are many breath taking sites that very good for tourism.

Mrs. Yunita from House of Barista informed that this particular beans were selected as favorite one at International event (supported by the Ministry of Trade of Indonesia) in Germany in 2021. The farmers processed the beans in natural, full washed and honey. The cupping scores taken from the event were 83.5, 83.25, and 80. On 7 Jan 2022, Steve of Kopi Presiden roasted the green beans to the color of City roast (Ngebut Kilat style) and to the color of Full City roast (Tenaga Dalam style.)

Kamus Kopi reviewed it with SCAA cupping protocol. The cupping notes for the Ngebut Kilat were brown sugar, cinnamon :fragrance, brown sugar, honey :aroma, cinnamon, salted honey :flavors, medium high:acidity, medium:body, pleasant :after taste. The cupping notes for Tenaga Dalam were brown sugar, raisin: fragrance, brown sugar, molasses-fruity: aroma, brown sugar, raisin, cinnamon: flavors, medium high: acidity, medium coating: body, short lingering: after taste.

Steve brewed it again with April brewer and paper filter (Suji Premium.) Steve asked Intan to join the review. She tasted the special flavor of orange peel in the coffee. In conclusion, the Bali Wanagiri arabica was a specialty coffee. The Kamus Kopi score was 89.50 for Ngebut Kilat and 89.75 for Tenaga Dalam.

Batang Kapas robusta is authentic coffee from a small coffee farm in the district of Kampar, Riau, Indonesia. The district Kampar was established around the 1956. There are two big rivers pass through the district, Kampar kanan dan Kampar kiri (according to Wikipedia.) When we look at the map of Sumatera island, the district is located in the center of Sumatera. And the district of Kampar is also well known as the Veranda of Mecca in the Riau.

Mrs. Widya from Bekal Pemimpin informed that this particular beans were from small village, Lubuk Bigau. This village is located next to the conservation forest of Bukit Rimbang Bukit Baling. The farms are located at 200 - 250 masl. The farmers plant multiple varietals. The traditional post harvest process is natural process. And this village is still practicing traditionally agriculture practice, without using machine. Currently, the producing coffee area is just 7 Ha from 60 Ha area. Currently his farm capacity is about 300 Kg / month. Dea of Kopi Presiden roasted the green beans to the color of City+ roast on the 12th of Nov 2021.

Kamus Kopi reviewed it with SCAA cupping protocol. The cupping noteswere milk chocolate, earthy, hint of fruit :fragrance, hint of fruit & brown sugar:aroma, cinnamon, brown sugar, hint of vinegar :flavors, medium:acidity, medium :body, clean & refreshing :after taste.

Steve brewed it again with La Marzocco GS3 espresso machine. He brewed it into espresso and Cappuccino. He asked Intan to join the review. Intan was surprised that the robusta's taste was so soft, more like the arabica's. With that Steve confirmed his cupping. But overall, the Batang Kapas robusta was a very fine robusta. The Kamus Kopi score was 88

Papua Nabire arabica is authentic coffee from a small coffee farm in the district of Nabire, Papua, Indonesia. The district Nabire was established around the 1966. There are about 172.960 people lives in the District of Nabire in 2021 (according to Wikipedia.) When we look at the map of Papua island, the island looks like a bird silhouette. And the district of Nabire is located at the bird's neck.

Mrs. Yunita from House of Barista informed that this particular beans were from small village, Oksibil at Bintang Mountain. The farms are located at 1800 - 2000 mdpl. The farmers plant multiple varietals. The main harvest season are May- August. The traditional post harvest processes are full washed. Currently his farm capacity is about 7 Mton / harvest. Octa of Kopi Presiden roasted the green beans to the color of City roast on the 3rd of November 2021.

Steve brewed it again with Kalita brewer and paper filter. With that Steve confirmed his cupping. But overall, the Papua Nabire arabica was a specialty coffee. The Kamus Kopi score was 91.5.

Lani Mendek arabica - Papua Lanny Jaya- Moses Yigibalom

Kamus Kopi received a special coffee, Lani Mendek arabica from Mr. Marsyel.

Lani Mendek arabica is authentic coffee from a small coffee farm in the district of Lanny Jaya, Papua, Indonesia. The district Lanny Jaya was established in the 2008. The city of Tiom is the administrative city of Lanny Jaya. The total area of Lanny Jaya is about 6.077 km2 (according to Wikipedia.) The highest elevation is about 4.500 masl. And the average elevation is about 1.700 masl (according to topographic-map.com). Therefore this district is suitable for producing quality arabica coffee. Especially Lanny jaya has fertile soil from the tropical forests.

Mr. Marsyel helps his friend in marketing and improving of the coffee. His friend is the coffee farmer. His friend name is Mr. Moses Yigibalom. According to Mr. Marsyel, Mr. Moses's farm still has the original seeds that planted by BPPT in the 1986. The main varieties are kartika, lini S and KT. The main harvest season are in April, June and August. The traditional post harvest processes are fullwash and natural. Currently his farm capacity is about 500Kg in a year. Mr. Moses still need lots of supports especially with the equipment. Mr. Moses is roasting his coffee with sample roaster only. There is a special note printed on the packaging label. It says "Nina Kopi Purompaga Mendek" It has a very authentic meaning, We have coffee from the Mountain.

Kamus Kopi received three bags from Mr. Marsyel. One is roasted coffee (roasted by Mr. Moses). Another one is green beans with natural process. And another bag is green beans with full wash process. Bayu of Kopi Presiden roasted the green beans to the color of City roast on the 4th of October 2021.

Kamus Kopi reviewed it with SCAA cupping protocol. The cupping notes for the roasted coffee were nutty, cinnamon, fruity :fragrance, fruity :aroma, green, nutty, overripe cherry/vinegary :flavors, medium:acidity, medium low :body, lingering hint of leaf :after taste. The cupping notes for the natural process were brown sugar, earthy, cinnamon: fragrance, fruity & brown sugar: aroma, brown sugar, earthy & vinegary: flavors, medium: acidity, medium high: body, hint of tobacco/cinnamon: after taste. The cupping notes for the full wash process were brown sugar, fruity: fragrance, brown sugar, fruity & hint of flower: aroma, fruity, brown sugar & vinegary: flavors, medium high: acidity, sweet, refreshing: after taste.

Steve brewed it again with April glass brewer which manufactured by Suji Bandung. He asked Dea to join the review. According to Dea, the coffee showed thicker body and woody notes. But overall, they all enjoyed this specialty coffee. The Kamus Kopi score was 92 for the full wash, 90,5 for the natu ral, and 88 for the roasted coffee.

Sun-dried Toraja Pulu Pulu Arabica - 15 July 2021

Kopi Toraja Pulu Pulu arabica Sun dried - Juli 2021

Kamus Kopi received special request from Mr Nelson of Butler to review this Toraja Pulu-pulu. Pulu-pulu is an area in the Region of North Toraja, South Sulawesi, Indonesia. The area is located about 1800 masl. The major varietals are Typica and Lini-S. The harvest period is usually around December. The common post harvest process is full washed. However this Butler's Toraja Pulu pulu was labeled as Sun dried which usually refer to Natural (dry) process.

Butler roasted the coffee to the color of City+ roast on 17 July 2021. Steve cup the coffee according to SCAA cupping protocol. The cupping notes were, fragrance: ripefruit & cinnamon, aroma: ripefruit, flavors: brown sugar & cinnamon, acidity: medium high, body: medium, after taste: short lingering cinnamon & hint of tannin.

Steve brewed it again with Kalita and paper filter. Steve asked Dian to join the review. Dian noticed the standout acidity from the coffee. Then she also noticed the tamarind after taste. Overall they both agreed that this is a specialty coffee. The Kamus Kopi score was 90.5

Sun-dried Bali Kintamani Arabica - Butler - 15 July 2021

Kamus Kopi received a special request from Mr. Nelson to review the Bali Kintamani arabica. Kintamani is located at northern of Bali. It is an area in the region of Bangli, Indonesia. Not only it has sacred Puras but also beautiful sceneries and exotic coffee. In addition to the high altitude (with elevation of 1300 – 1600 masl), the fertile soil "Volcanic Mountain Batur" plus the abundant water "Lake Batur" are great combination to grow arabica trees.

Kamus Kopi received the Sun-dried process which usually refer to Natural process. Steve reviewed them with SCAA cupping protocol. The cupping notes for “Sun Dried” Bali Kintamani arabica were brown sugar & cinnamon: fragrance, ripe fruit of lime :aroma, brown sugar & lemony :flavors, medium high (when cooler it increased):acidity, medium low: body, sweet, clean & refreshing :after taste. Steve brewed it again with La Marzocco “GS3” espresso machine. At first, he brewed the espresso and latte. And then he asked Chery to join the review. They noticed the high acidity in the espresso. When they tried the lattes, the coffee’s tastes were weak. So they poured the leftover espresso to boost up the coffee flavors. But they agreed that this was specialty coffee. The Kamus Kopi score were 90,5 for the Sun-Dried Kintamani Arabica.

Mandailing is one of major groups resides in regions of South Tapanuli, Mandailing Natal, and North Sumatera. The word derived from two words, mande (mother) and hilang (lost.) quoted from Wikipedia. The major arabica farma are located in the village of Sialaman with elevation of 1250 - 1300 masl. The main harvest season is in December. And the main varietas are Andung sari and Bourbon. Barista ID helped this Mandailing Sipirok to get 1st Award at the Specialty Coffee Cupping Introduction Meeting Award 2021.

Kopi Presiden roasted the beans with Tanaga Dalam (inner power style) to City + roast. Steve reviewed the coffee with SCAA cupping protocol. The cupping notes were brown sugar & fruity :fragrance, cinnamon & brown sugar :aroma, brown sugar & cinnamon :flavors, passion fruit medium high :acidity, sweet, medium high :body, hint of floral :after taste.

Steve brewed it again with Kalita 102 and paper filter. Dian joined the review. She noticed the well-built body, pleasant acidity, complex flavors. She loves the coffee so much.

Kalosi is a trading city in the region (Kabupaten) of Enrekang in the Prov. of South Sulawesi, Indonesia. Enrekang is also a name of an area (Kecamatan) in Enrekang region. Enrekang area is located at the foothill of the highest mountain in Sulawesi, Mount Latimojong. The elevation of Enrekang is about 1500 masl. Enrekang has lots of rainny days. Total is about 160 days per year with 2300-2900 mm of rain water per year (based on Wikipedia.) The name of Enrekang itself is from the word of Endeg which means Climbing.

Steve brewed it again with Clever dripper and paper filter. Chery joined the reviewed also. She was Ok with the level of acidity from the coffee. She also noticed the green tea floral note. Steve and Chery agreed that this Kalosi Bemba was specialty arabica.

Kamus Kopi received specialty green beans of Wawowae from Mrs Yunita with Barista ID. Kopi Presiden roasted the beans for Kamus Kopi Review.

Wawowae is a village in the area of Bajawa, region of Ngada, Province of East Nusa Tenggara, Indonesia. The village has good altitude for coffee farms which is around 1500 masl. The main varieties are Lini S, Bourbon and USDA. The harvest season is around June - July. The village does not water spring. Fortunately, the village has water well which sufficient to supply the whole village. The meaning of Wae (from the village name) itself is water according to local language.

Kamus Kopi was fortunate to got this Wawowae. Mrs Yunita said this Wawowae was one of the 3 awards for First Specialty Coffee Cupping Introduction Meeting in Guangzhou China around 24 March 2021.

Kamus Kopi reviewed it with SCAA cupping protocol. The cupping notes were cinnamon & earthy :fragrance, brown sugar & nutty :aroma, cinnamon & nutty :flavors, green apple & medium high :acidity, sweet, medium low :body, clean & hint of cinnamon :after taste, balance profile.

Kamus Kopi received a specialty coffees from Mrs Yunita with Barista ID. One of them was Kerinci arabica. Then Kopi Presiden roasted the beans for Kamus Kopi Review.

Kerinci is a region in the Prov. of Jambi, Indonesia. Jambi is located about the center of Sumatera island. The region has mountain lines, tropical forests and diverse flora and fauna. The national flower, Rafflesia Arnoldii, can only be found naturally in this Jambi region. And the name of Kerinci itself was derived from name of Kurinci which naturally blooming at mountain lands.

This Kerinci arabica was sourced directly from arabica farms at Kayu Aro village. The village is located about 1300 - 1650 masl. And the harvest seasons were at April - July and October - December. This specific beans were went through post harvest process of Honey.

Kamus Kopi reviewed it with SCAA cupping protocol. The cupping notes were aren, cinnamon & earthy: fragrance, black tea & sweet molasses: aroma, Tangerine citrus- medium: acidity, sweet, medium broad :body, hint of tannin leaf :after taste, quite balance profile.

Steve brewed the Kerinci again with Suji dripper and paper filter. Chery joined the review. She noticed the "black tea" flavor and easy to drink profile from the coffee. They both agreed that this was specialty arabica.

Sapan Toraja Arabica & Toraja arabica wet hull - Mr. Marcello - April.2021

Kamus Kopi received many coffee bags from Mr. Marcello G. At this time, Kamus Kopi reviewed the Toraja arabica and Sapan Toraja arabica out from those bags. And both of them were hulled wet.

Tana Toraja is a region in the Province of South Sulawesi of Indonesia. It is home of Toraja ethnic group. The meaning of Toraja is people of the uplands. In early Toraja society, family relationships were tied closely to social class; aristocrat, commoners and slaves. They believed that the aristocrat to be direct descendants of the descended person from heaven and lived in the ancestral houses, Tongkonans. Tongkonans were decorated with many wood carvings which carrying prudent messages about society, culture and nature. And Torajans implement these messages in their daily lifes including their ways of farming Toraja coffees.

Kamus Kopi reviewed two coffees from Toraja. One bag was stated from Sapan village. Both went through semi washed processed, and then hulled while in "wet" condition. The Sapan Toraja was roasted into Cinnamon roast. And the Toraja was roasted into French roast.

Kamus Kopi reviewed them with SCAA cupping protocol. The cupping notes for Sapan Toraja were fruity & cinnamon :fragrance, fruity & soury citrus :aroma, lemon & cinnamon :flavors, medium high :acidity, sweet, medium low: body, clean woth hint of leaf :after taste. Steve asked Intan to join the review. He brewed the Sapan toraja with clever dripper and paper filter. He also brewed the Toraja as espresso and latte with Delonghi Eletta machine. Intan noticed the higher acidity in Sapan than Toraja. But she enjoyed drinking the Toraja espresso more than Sapan black. The Toraja in latte was bit weak. Kamus Kopi received a bag of coffee from Mr Hans Hambali, a coffee lover. It was a famous coffee in the City of Sorong, kopi bubuk Senang (Happy fineground coffee.)

City of Sorong is located on the western tip of Papua island. The name comes from the word Soren which translated as "deep and wavy ocean" in Biak languange. Beside big oil mining activity, the City is the hub of trades and tourism. Eventhough, the City has no coffee farm, but the City has a famous coffee-brand, Happy coffee. According to Papuabaratpos, the Happy coffee established since 1985. According to Kompasiana, the shop blended robusta from many regions such as Sulawesi, North Sumatera, Aceh and Manokwari.

Kopi reviewed it with SCAA cupping protocol. The cupping notes were cocoa, woody & earthy: fragrance, woody & cocoa: aroma, woody & cocoa: flavors, medium: acidity, medium low: body, medium low: sweetness, medium long: after taste.

Steve brewed the coffee with full immersion method, and filtered it though cloth filter. Steve asked Chery to join the review. Chery and Steve enjoyed the coffee more as black coffee than sweet milky coffee. Furthermore, they both felt happy after sipping this "Happy Coffee."

Kamus Kopi received two coffee bags (Wanayasa arabica and Pegundungan arabica) from Mr. Jefri Tri H of Ganapatih Coffee Bean Roastery.

Wanayasa and Pegundungan are two villages which located in the region of Banjarnegara, Central Java, Indonesia. Those two villages are about the west side of Dieng mountain, active volcanic in Central Java. Wanayasa is at 1200-1400 masl; and Pegundungan is at 1400-1600 masl. Majority of arabica varietals grow in the villages are Lini S, Kartika and Sigararutang. Total coffee area is about 330 Ha. The major harvest season is around May.

Ganapatih Coffee-Bean Roastery works together with other farmers from planting, harvesting to processing the green beans. And then Mr. Jefri roasted the beans to the color of Cinnamon roast for the Pegundungan and City roast for the Wanayasa by utilizing local roasting machine.

Steve started the review by cupping them following the SCAA cupping protocol. The cupping notes for Pegundungan were brown sugar & hint of fruit :fragrance, ginger & brown sugar :aroma, brown sugar & lime :flavors, medium high & green apple :acidity, sweet, medium high :body, refreshing & hint of flower :after taste, balance profile. Cupping notes for Wanayasa were nutty & hint of brown sugar :fragrance, brown sugar :aroma, medium high citrus :acidity, medium sweetness, medium low :body, refreshing & hint of tannin: after taste.

Steve brewed the two arabicas again with clever dripper with brown paper filters. He asked Dian to join the review. Dian enjoyed the Wanayasa more than Pegundungan. She enjoyed the higher acidity and easy to drink from Wanayasa. Steve enjoyed the Pegundungan more because the balance profile. The Kamus Kopi score were 90.5 for Wanayasa and 93 for Pegundungan.

In this review, Kamus Kopi reviewed on the second bag of specialty coffees from Salecoffee. It was Toraja Pulu-pulu arabica.

Pulu-pulu or Pulu' pulu' is a district in the area of Buntu Pepasan, in region of North Toraja, South Sulawesi, Indonesia. It is located in very high altitude, about 2000 masl. Some people said this is the highest land in Toraja. The majority of arabica varietal grown in this district is Lini S. And most of the beans got processed with semi wash method.

Salecoffee roasted this Pulu-pulu arabica to the color of Cinnamon roast. The coffee beans were packed fresh and sealed in the alufoil bags. At first sight, Kamus Kopi already fell in love with the cleanness and the beauty of the beans.

Steve started the review by cupping it with SCAA cupping protocol. The cupping notes were nutty & sugar cane :fragrance, sugar cane :aroma, brown sugar, sugar cane & hint of vinegar :flavors, green apple & medium high :acidity, sweet, medium low :body, clean &hint of flower :after taste.

Steve brewed it again with Osaka dripper with titanium filter. Steve asked Octa to join the review. Octa got the fruity note and sugar cane flavor from the coffee. Steve noticed the sugar cane flavor and acidity were higher when brewed with dripper. They both enjoyed this specialty coffee. The Kamus Kopi score was 91.5

Kamus Kopi received a special request from Mr. I Komang Ratna Putra to review the Bali Kintamani arabica.

Kintamani is an area in the region of Bangli in the Bali island, Indonesia. Not only it has beautiful scenery, but also exotic coffee. In addition to the high altitude, the fertile soil "Volcanic Mountain Batur" plus the abundant water "Lake Batur" are great combination to grow arabica trees. Before other areas in Bali offering coffees, coffee lovers around the World only know that Kintamani coffee as Bali coffee.

Mr. I Komang Ratna Putra and family own coffee farms in Kintamani. To be specific, it is at the village of Bantang. The farm is located around 1430 - 1600 masl. Right now, the 3 Ha from their farm is already producing. And while they are expanding their farm, they are continuously improving their coffee products.

Kamus Kopi received two coffee bags, Natural process and Yellow Honey process from Mr. Komang. Steve reviewed them with SCAA cupping protocol. The cupping notes for Natural process were cocoa & earthy: fragrance, tangerine :aroma, tangerine & herbs :flavors (when cooler- ripe fruit & mollases added to flavors), medium :acidity, medium :body, sweet, hint of tannin :after taste, balanced profile. The cupping notes for Yellow Honey were nutty & herbs :fragrance, woody & hint of citrus :aroma, woody & hint of lemon :flavor, medium high :acidity, medium low sweetness, medium low :body, clean & hint of green honey :after taste.

Steve brewed the Natural process with automatic machine of Delonghi Eletta. At first, he brewed the espresso. And then he asked Chery to join the review. Steve also brewed the coffee as cappuccino. They noticed that the coffee were good already as black coffee (espresso.) They agreed that this was specialty coffee. The Kamus Kopi score were 93 for the Natural process, and 90.5 for the Yellow Honey.

Sipirok is the capital city of the South Tapanuli region, Indonesia. Sipirok is located at the valley of the Mountain range of Barisan. The major group lives in the area is Batak Angkola. The region manages a conversation area (Dolok Sibual Buali) which give sanctuary to Sumatera Orang Utan (pongo abelii), Sumateran Tigers (panthera tigris sumatrea) and Meranti trees. The coffee itself were grown at the village of Sialaman which located about 1,250 masl. It went thru semi washed processed. Coop Marsada directly involved in developing this coffee, and promoting it to all over Indonesia.

Kamus Kopi roasted the coffee with two different roasting styles, tenaga dalam and santuy. Steve reviewed those two batches of coffees with SCAA cupping protocol. The cupping notes for Tenaga dalam were nutty, fruity, cinnamon :fragrance, brown sugar :aroma, brown sugar &apple :flavors, medium high :acidity, medium high :body, lingering cinnamon :after taste. The cupping notes for santuy were brown sugar, earthy & cinnamon :fragrance, green apple & cinnamon :aroma, high :acidity, medium low :body, short :after taste.

Steve brewed the tenaga dalam coffee with Suji dripper and paper filter. Steve asked Intan to join the review. Intan noticed the medium acidity of the coffee. Steve and Intan enjoyed the coffee. The Kamus Kopi score were 93.5 for tenaga dalam and 90.5 for santuy.

Kamus Kopi received a special coffee, Moanemani Dogiyai arabica from Salecoffee.

Moanemani is a village in the region of Dogiyai, Papua, Indonesia. The major group lives in the area is the Mee group. According to some elders, Moanemani was the capital city of Dogiyai. And Dogiyai itself is a new region. It used to be part of region of Nabire. Now the highland of central Papua is becoming Dogiyai region. The coffee plantations are mostly located at the fertile Kamu valley which is dry bed of Paniai lakes. Salecoffee is working closely with the farmers in developing and promoting the Moanemani coffee. They sourced the coffee direct from this Moanemani village. Then they roasted the coffee in their shop in Nabire by utilizing the NOR roasting machine. For this coffee bag, they roasted it to the color of Cinnamon roast.

Kamus Kopi reviewed it with SCAA cupping protocol. The cupping notes were nutty & sweetcorn/ caramel :fragrance, light brown sugar :aroma, brown sugar :flavor, green apple, medium high :acidity, medium low :body, short clean :after taste.

Steve brewed it again with two brewers, Suji glass dripper and Clever paper dripper. Steve tried to bring up the body in the coffee. He asked Chery and Bayu to join the review. According to Chery and Bayu, the coffee from the Suji glass dripper had thicker body and solid flavors. But overall they all enjoyed this specialty coffee. The Kamus Kopi score was 90.5

Lobusingkam is a village in the region of North Tapanuli, North Sumatera, Indonesia. It is located south of Lake Toba, heading to Tarutung area. It is located at highland. The main group lives in the area is Batak Toba. The main post harvest is semi washed. Mrs. Meslinar farms and process the coffee at her half Ha. She currently distributes the coffee to small cafes in the surrounding cities.

Steve reviewed the coffee with SCAA cupping protocol. The cupping notes were earthy & cinnamon :fragrance, brown sugar :aroma, brown sugar & cinnamon :flavors, medium :acidity, sweet, good :body, short tobbacoish :aftertaste & balances profile.

Steve brewed it with ceramic V60 dripper and paper filter. Steve asked Dea, Master Roaster of Kopi Presiden to join the review. Dea never heard about this coffee. Steve also commented in this review that it is hard to get original coffee from North Tapanuli. And they were lucky to get chance to review this Lobusingkam coffee. In addition, the coffee was still fresh and high quality, grade 1. They both agreed that this is a specialty coffee. Kamus Kopi score was 92.

Hutajulu is a village in region of Humbang Hasundutan, North Sumatera, Indonesia. It is located in the south west of Lake Toba. It is still part of Lintong region including Dolok Sanggul and Lintong Nihuta. The major varietal is Sigara rutang. The main harvest is similar with other regions in North Sumatera, which is around May.

Steve reviewed the coffee with SCAA cupping protocol. The cupping notes were herbs, woody/ cinnamon :fragrance, brown sugar aroma, brown sugar, hint of leaf & green apple :flavors, medium high :acidity, sweet, good :body, clean & tobbacoish/cinnamon :after taste and balanced profile.

Steve brewed the coffee as espresso and cappuccino with Delonghi Magnifica. Steve asked Intan to join the review. The espresso came out nice with brown sugar flavor and not too high acidity. The coffee profile was bit hidden in cappuccinos. Steve and Intan agreed that it was a specialty coffee. And it has great potential to be explored more. The Kamus Kopi score was 94.5

Kamus Kopi went further to review Sidikalang coffees. We reviewed the Sidikalang Arabica already on 27 Jan 2021. This time, we reviewed the Sidikalang Robusta.

Sidikalang is an area in region of Dairi, North Sumatera, Indonesia. Sidikalang area is about 191,625 Ha or about 2.67% from all North Sumatera. It is on elevation about 1000 masl at the foothill mountain range Barisan. Since long ago, Sidikalang was known more for its robusta than its arabica. The robusta plantations are about 14K Ha which almost triple size of arabica plantation. Kopi Presiden purchased this Sidikalang robusta from Janji Maria. Then Octa, Kopi Presiden's master roaster, roasted the coffee to two different colors, City roast and Full City roast.

Steve reviewed both batches with SCAA cupping protocol. The cupping notes for City roast were cinnamon :fragrance, woody, cinnamon & herbal :aroma, cinnamon & woody :flavors, medium :acidity, medium low :body, clean :aftertaste. The cupping notes for Full City roast were cocoa, earthy & woody herbal :fragrance, brown sugar :aroma, cinnamon & brown sugar :flavors, medium low :acidity, medium high :body, sweet, pleasant cinnamon :after taste.

Steve asked Octa to review the coffees. Steve brewed the Full city roast with two different brewers, moka pot and clever dripper. The coffee from the clever dripper tasted with higher body, solid flavors and clean after taste. They both agreed that this was a special coffee. The flavor and acidity from Sidikalang robustas were similar to Sumatera arabica. The robusta had higher body and less acidity. The Kamus Kopi score were 92 for the Full city roast and 88 for the City roast.

Exploration into Papua Arabicas - Kohad Coffee- Kopi Presiden- Feb 2021

Eventhough Kamus Kopi had reviewed Papua coffees, Kamus Kopi still received requests to review more Papua coffees. Therefore, Kamus Kopi reviewed 5 more Papua coffees, Baliem valley arabica, Moanemani arabica, Yahukimo arabica, Manokwari arabica & Amungme arabica.

Papua is a vast land in Indonesia with area of about 500thousand km2. Mountain range of Jayawijaya with its eternal snow stretched on this land. It is also wealthy of natural resources and diverse of native tribes (with more than 301 tribes.) The iconic birds from this land are the birds of paradise which locals call as Cenderawasih birds. From 42 species, 37 specises inhabit in Papua Indonesia. The birds have very magnificent feathers which made them always targeted by hunters. And fortunately, the birds are now legally protected under Indonesia laws as endangered animals.

Steve reviewed these 5 Papua arabicas with SCAA cupping protocols. However due to limited space, there were 3 glasses used for one batch arabica. He amazed with the cupping experiences from these 5 arabicas. Each had unique and memorable experiences. The cupping notes for Baliem valley were woody, rainforest earthy & herbal leafy :fragrance, woody & brown sugar :aroma, palm sugar, flowery &cocoa :flavors, medium high :acidity, sweet, broad :body, medium lingering &clean :after taste. The notes for Yahukimo were wet wood & cocoa :fragrance, brown sugar & earthy :aroma, brown sugar & hint of vinegar :flavor, medium high & green apple :acidity, medium :body, clean, medium lingering &hint of straw when cold :aftertaste, The notes for Moanemani were nutty :fragrance, ginger :aroma, palm sugar & cinnamon :flavors, medium :acidity, sweet, broad :body, cinnamon :aftertaste. The notes for Manokuari were earthy :fragrance, cocoa & cinnamon :aroma, green apple & vinegary :flavors, medium :acidity, medium low :body, hint of vinegar :aftertaste. The notes for Amungme were dark chocolate & earthy :fragrance, dark chocolate & flowery :aroma, chocolate & brown sugar :flavors, medium high :acidity, sweet, big :body, lingering cocoa :after taste.

Bayu, leader of Himpunan Kopi Indonesia, helped this review from grinding to brewing. He brewed the Amungme with clever dripper and the Baliem with ceramic v60. They both enjoyed the coffees equally. The Kamus Kopi scores were 96 for Baliem valley, 92 for Yahukimo, 94 for Moanemani, 91 for Manokuari and 95.5

for Amungme.

Kopi received a coffee package from Mr. Bandi of Arabica Bukit Palasari. Inside the package, there were three bags of coffees; arabica natural organic (roasted), arabica natural organic (green), arabica full wash (green.) All coffees were from Girimekar.

Girimekar is a village in area of Cilengkrang, region of Bandung, West Java, Indonesia. The farm is located at 1200 - 1800 masl. The majority of plants' variety is buhun/ java preanger. And there is also variety of sigarar utang. Mr. Bandi, an officer from Agriculture Office, assists the Giri Senang farmer-group in growing and processing quality coffee beans on this area. The group can process beans with many methods of post harvest such as wine, natural, honey, full wash and semi wash. The group is also certified to produce organic coffee (SNI, EU and Ifoam.) From 50 ha of organic farms, 7.06 ha is fully certified already. The main harvest season is on March - August.

Kamus Kopi reviewed the three bags together at this video. A day before, Steve roasted the green beans with inner power style to the color of City roast. Steve reviewed the coffee with SCAA cupping protocol. The cupping notes for the "roasted" natural arabica were sweet & ripe fruit : fragrance, brown sugar & ginger :aroma, woody, rooty & hint of vinegar :flavors, medium high :acidity, medium body and clean short :after taste. The notes for "green" natural arabica were sweet ripe fruit :fragrance, fruity & brown sugar :aroma, palm sugar & fruity :flavors, green apple :acidity, big :body, sweet & pleasant lingering ripe fruit :after taste. The notes for "green" full washed arabica were sweet fresh ground - fragrance, woody &light brown sugar :aroma, brown sugar& woody :flavors, pineapple :acidity, sweet, medium :body, clean & refreshing :after taste.

Intan joined the review and enjoyed the natural arabica brewed with french press and clever dripper. Intan noticed the green apple taste. She also commented that the body was higher when brewed with french press pot. Steve and Intan paired the coffee with honey yams. According to Mr. Bandi, GiriMekar is also well known for its honey yam. Another name of this type of yam is ubi cilembu which originated from Sumedang. The Kamus Kopi scores were 92 for the roasted natural arabica, 95 for the green natural arabica and 94 for the green full-wash arabica.

Kamus Kopi fulfilled the promised to review another coffee bag from a package sent by HS coffee roastery. It is an arabica coffee from Wae Uwu.

Wae Uwu is a village in the region of Manggarai Barat, East Nusa Tenggara, Indonesia. It is located deep in the center of the island. Uwu has very limited access to the area. However apparently, the area is producing quite many of arabica coffee.

And HS coffee is currently developing arabica from this Uwu. According to the bag label, the plants variety is Kartika. And the farm is located at 1500 masl. In addition, the beans were specially processed with black honey process. As we know that black honey is gaining popularity within the young generation.

Steve reviewed the coffee with SCAA cupping protocol. The cupping notes were nutty & sweet straw as fragrance, brown sugar as aroma, tamarind & vinegary in representing honey flavors, medium high acidity, medium sweetness, medium low body, clean & hint of tannin after taste.

Steve confirmed it by brewing it with clever dripper and paper filter. Steve asked Dea and Chery to join the review. Dea & Chery got the tamarind, tannin, higher acidity and clean cup. And they all agreed on that this coffee is a specialty coffee. It has good potential. But it needs more works to develop it more. The Kamus Kopi score was 92.

Kamus Kopi received a coffee package (Gayo and Mandailing) from Mr. Budiman, Janji Maria back in Dec 2020. Kamus Kopi reviewed the Gayo arabica already on 19 Dec 2020. Now Kamus Kopi reviewed on the Mandailing arabica from Pagur.

Pagur is a village in region of Mandailing Natal, North Sumatera, Indonesia. Pagur is at the south part of North Sumatera; and at border to West Sumatera. According to 2016 article at official site of Mandailing Natal, Pagur has elevation about 900 - 1400 masl. Pagur was one of the biggest coffee producer in Mandailing Natal. It produced about 10 ton / month. Another public article stated that there were about tens of old arabica plants in Pagur. The tree trunks were about 62 cm in diameter and 20 m in height.

Steve reviewed the coffee with SCAA cupping protocol. The cupping notes were nutty & woody as fragrance, brown sugar & woody as aroma, palm sugar & cinnamon as flavors, medium acidity, clean cups, sweet, medium high body and pleasant after taste.

Steve brewed the coffee as espressos with La Marzocco GS3. Steve asked Intan to join the review. Steve and Intan noticed the higher acidity in espressos. To confirm it, Steve made Latte with sterilized milk from Bear brand. They still noticed the high acidity in the lattes, but it was tamed down abit. They both agreed that the Mandailing Pagur was a specialty arabica. The acidity in the coffee brighten the coffee up. It is just like a spotlight lighted up a gemstone. The Kamus Kopi score were 94.

Pontianak robusta Aming dan Asiang - Dec 2020

Kamus Kopi finally got chance to review coffes from two famous coffee-shops in Pontianak.

Pontianak is a the Capital City of West Kalimantan, Indonesia. Beside very well known as the main gate to the Kalimantan from the sea, the City is also well known as the Coffee City. Before the pandemi, eventhough there were lots of coffee shops in the City, all of the coffee shops were busy serving customers. That was the proved that the coffee culture in Pontianak is very strong and becoming part of Indonesian herritage. Aming coffee shop has opened since 1970. And Asiang coffee shop has opened since 1958.

Steve reviewed both coffees with SCAA cupping protocol. Eventhough it is not the correct protocol to review these coffees, but this protocol is a start to get an overview of the coffees. The cupping notes for Asiang coffee were woody & smoke as fragrance, woody & smoke as aroma, woody flavor, low acidity, medium low body, sweet and lingering smoke aftertaste. The cupping notes for Aming coffee were woody & choco as fragrance, nutty as aroma, choco bits & nutty flavors, medium acidity, sweet, medium high body, lingering but not too long of choco bits as after taste.

Steve brewed the Asiang coffee with immersion technique. He also utilized the cloth filter and metal pot that similar ones used at Asiang shop. Steve brewed the Aming coffee with Moka pot. Steve asked Dea to join the review. Dea enjoyed the Asiang coffee more than Aming coffee. The acidity in Aming coffee was higher when brewed with Moka Pot. The Asiang coffee came out much easier to drink when brewed and filtered with cloth filter. Both are deserved to represent the coffee culture of Pontianak. The Kamus Kopi score for Asiang coffee was 87. The K amus Kopi score for Aming coffee was 90.

Kamus Kopi received a package of coffees from North Sulawesi. After reviewed the Modayag robusta Menado on 22 Dec 2020, now Kamus Kopi reviewed the Koya arabica Minahasa.

Koya is a village in South Tondano, region of Minahasa, North Sulawesi, Indonesia. According to an ethnic group in the region, Minahasa people, the meaning of Tondano is water people which a combination from two words, tour (people) and dano (water collection.) Beside beautiful sceneries and exotic foods, now Koya offers specialty arabica. Arabica plants were planted in Koya at around 2012. In the elevation of 800 -900 masl, the arabicas grow well. The harvest season is around May - December. The beans were processed with semi wash method. Redo Coffee roasted it to the color of City + roast on 12 Dec 2020. And packed it in black gusset bag with valve and good label.

Kamus Kopi reviewed it with SCAA cupping protocol. The cupping notes were hint of herbs & brown sugar as fragrance, brown sugar as aroma, deep brown sugar as flavors, medium acidity, broad body, sweet, lingering cinnamon aftertaste and very balanced profile.

Steve confirmed it by brewing it with La Marzocco GS3. It took some times to get the profile of the espresso. After he brewed several espressos, he asked Intan and Chery to join the review. Intan and Chery commented on the higher acidity in the espressos. Therefore, Steve brewed it as Latte for Intan and Chery. They all agreed that the acidity is more subdued in the lattes. When Steve were about to wrap up this review, a phone call ended all. The Kamus Kopi score for Koya arabica was 94.5

Kamus Kopi received a small bag of coffee by end of Dec 2020. It is a special arabica from Sidikalang.

Sidikalang is a small area in region of Dairi, North Sumatera, Indonesia. Sidikalang is located around 1000- 1500 masl. Coffee plants grow in this cool temperature and mineral-rich volcanic soil of Bukit Barisan mountain line. Sidikalang coffee are well known for its robusta and arabica. And the traditional post-harvest processing for the arabica is semi-wash method. Seven Bika roasted this Sidikalang arabica to the color of Full city roast.

Steve reviewed it with SCAA cupping protocol. The cupping notes were nutty & hint of fruit as fragrance, brown sugar & woody as aroma, brown sugar & cinnamon as flavors, medium & tamarind acidity, sweet, medium body and lingering tobacco after taste. Steve asked Intan to join in reviewing this Sidikalang. Steve thought this Sidikalang roasted for younger generation. Thus, he brewed it with favorite brewing tool for young generation, ceramic V60 dripper & paper filter. The coffee acidity was higher in this filtered coffee. Steve and Intan agreed that this Sidikalang is specialty coffee. The Kamus Kopi score was 94.5

Flores Komodo arabica - La Bajo Flores Coffee - 2020

Kamus Kopi received a hand "coffee" gift from Hidayat family. One of them is La Bajo Flores arabica.

La Bajo is a short of Labuhan Bajo. It is a fishing village in the region of West Manggarai, East Nusa Tenggara, Indonesia. Nowaday, Labuhan Bajo is the famous destination for International tourists. It is also a gate to visit the Komodo dragon. Komodo dragon (Varanus Komodoensis) is a species of lizard that lives in the Komodo island, Rincah, Flores, Gili Montang and Gili Dasami. It is the largest lizard with average length of 2-3 meters (6.5 - 10 ft) and weight around 70 Kg (154 lbs.)

La Bajo Flores Coffee is a coffee shop in Labuhan Bajo. Beside serving the coffee in their shop, it also selling it in retail packages. For the "Komodo" coffee, it roasted coffee to the color of French roast. It has good packaging design and materials. Just missed to stated the roasting date.

Steve reviewed the coffee together with Chery. The cupping notes were earthy, woody & hint of smoke as fragrance, brown sugar as aroma, woody & hint of vinegar as flavors, medium acidity, medium low body and balanced profile. Steve confirmed the notes by brewing the coffee with two of Moka pots. Steve successfully extracted the solid profile on the second pot. The Kamus Kopi score was 89.

Kayong Utara Liberica natural - Kojal Coffee - 31 Dec 2020

Kamus Kopi is very interested with exotic coffees from Indonesia. At this review, Kamus Kopi got opportunity to try Liberica coffee from the region of Kayong Utara (North Kayong), West Kalimantan, Indonesia.

Kayong Utara is located at southern part of Prov. West Kalimantan. The area has relatively flat topography with elevation from 0-500 masl except Mount of Palung with the peak at 1116 masl. And the Dayak are one of the native groups in Kalimantan.

Coffee plants in Kayong Utara are mostly grown in the alluvial soil. However there are more peat soil in the area than the alluvial soil. Therefore the current movements are to grow more coffees in the peat soil. Liberica variety is good to grow in both type of soil. Kojal coffee sourced the beans from plantation in the village of Podorukun. The plantation is about 40 Ha. And the harvest seasons are January - April and August - December. The beans were processed with natural method. On 31 Dec 2020, Kojal roasted it to the color of Full city roast with roasting machine made in Indonesia with model of AR3000.

Steve reviewed the coffee with SCAA cupping protocol. The cupping notes were woody & cinnamon as fragrance, brown sugar as aroma, medium low acidity, uniformed, clean cups, medium body with hint of jackfruit after taste. For second brewing method, Steve brewed it as Japanese drip. Intan & Dea joined for the review. Steve also brewed it as Americano for the third brewing method. They all enjoyed this hard to find coffee. The Kamus Kopi score was 90.5

Kamus Kopi received a package from Mrs. Meirina Chandra. Kamus Kopi reviewed the Juria already on 5 Jan 2021. Now Kamus Kopi reviewed the Yellow Caturra arabica.

Yellow caturra is a extended variant from Caturra variety. Caturra was started around 1915 from plantation in Brazil. The origin of this natural mutation variety is Bourbon variety. It gained popularity just around 2000. It is hard to find Yellow Caturra in Indonesia. The appearances were recorded in West Java, East Java and Flores.

Yellow Caturra in this review was from East Nusa Tenggara, Flores, Indonesia. There are only about 800 plants in Flores. This Yellow Caturra is unique. Not only the plants produce cherries ripen faster than Red Caturra, but also the plants are more disease resistant than traditional arabica varieties. The cherries were ripe in yellow color too. In Flores, the green beans were processed with full wash method.

Steve reviewed two bags of the Yellow Caturra. The first bag was roasted by The Ruteng Women Manggarai. And second bag was roasted by Bayu. The cupping notes for the first bag were earthy & herbal as fragrance, woody & hint burnt as aroma, woody, herbal, fruit & vinegary as flavors, medium high acidity, medium low body, almost uniformed cups, sweet and clean after taste. The second bag were brown sugar & sweet as fragrance, brown sugar & floral as aroma, snake fruit as flavor, medium high pineapple like acidity, uniformed, sweet, clean after taste and balance profile.

Steve brewed the first bag with glass filter and the second bag with titanium filter. Dea got chance to cup and to enjoy these coffees also. They both agreed that these two were specialty coffees. The Kamus Kopi score were 91 for the first bag and 94 for the second bag.

Kamus Kopi received two bags of coffee (Flores Uwu and Rancabali) from Mr. Hwi Siong. Steve picked the Rancabali arabica for this review.

Rancabali is an area in the region of Bandung, West Java, Indonesia. For getting to the area, we drive out from Bandung to the southwest for almost 2 hours. The area is located at higher ground, more than 1000 masl. There are many farms including tea farm managed by State owned companies. The main produce are tea, cinchona (kina) and coffee.

Mr. Hwi Siong gave a special Rancabali for this review. Since he owned a coffee roaster, HS Coffee Roastery, he curated and roasted the specialty coffees from Indonesia. The rancabali is one of his collection. Based from his info, green beans were processed through controlled fermentation process for 30 days. It referred specifically to anaerobic fermentation. This special fermentation is getting more interests especially from the young generations. This process requires special treatments, spaces and temperature. Then he roasted the coffee with fast roasting technique (similar to Ngebut Kilat technique) to the color of City roast (50-45.) He currently utilize a roasting machine made in Indonesia, NOR 1 Kg.

Steve cupped the coffee with SCAA cupping protocol. The cupping notes were nutty & fruity banana as fragrance, brown sugar as aroma, brown sugar, banana & tangerine as flavors, refreshing medium acidity, balanced, sweet, medium body and nice fruit after taste.

Steve and Intan, PT Selera Indah Perdana's accountant, reviewed the coffee by brewing it with La Marzocco GS3. They both enjoyed the espresso and latte. This Rancabali offered not only good taste but also contrast color between coffee and milk in the Latte. The Kamus Kopi score was 94.

Obor brand & Suka Hati brand - Pontianak - Jan 2021

Kamus Kopi received a package from Pontianak. It consisted of bags of coffee and breads.

Pontianak is the capital city of West Kalimantan, Indonesia. West Kalimantan is fourth largest province in Indonesia. Pontianak is also known as the Equatorial City because the equator-line lay across this city. Since Pontianak is very open and busy as trading port, the city is like a good model of multicultural city as diversity of ethnic groups live in the city together. The coffee culture in Pontianak is very strong also. From hundreds of coffee shops, there are some titled as legendary coffee shops. Kamus Kopi started with the Obor brand and Suka Hati brand.

Obor brand was started since the 1940. The owner's name is Byakto. On the label, there is an interesting words, Sin Khi Hiang. The meaning of Sin Khi Hiang is 'New' for Sin, 'Unique Aroma' for Khi and 'Something Good Fragrance' for Hiang. When all combined, it means coffee with unique aroma and best flavors. This according to article about Byakto at Pontianak tribune dated 17 May 2017.

Suka Hati brand was started since 1972. The shop is open from 6 am until 5 pm. It is usually more crowd in the morning. And they enjoyed their coffees with snacks covered with kaya jam (srikaya jam.) The snacks are very simple such as white bread, fried banana and fried taro.

After Steve reviewed both coffees with SCAA cupping. Steve asked Chery to review and to enjoy the coffees together. Steve brewed the Obor with moka pot. And Chery brewed the Suka Hati with clever dripper and paper filter. They enjoyed the Suka Hati especially when paired with white bread covered with kaya jam. They both agreed that both coffees taste quite similar. The cupping notes combined were woody, strawy & earthy as fragrance, dark choco &smoky as aroma, woody & dark choco as flavors, medium low acidity, medium body, enough sweetness, choco & green straw as after taste. The Kamus Kopi score were 88.5 for Obor and 88 for Suka Hati.

Kamus Kopi received a package of coffee from Mrs. Vina of Best Coffee Indonesia. There were three kind of coffees in the package. Kamus Kopi reviewed the Mandailing arabica on 11 Dec 2020 already. Now Kamus Kopi reviewed the Lintong arabica.

Lintong arabica is referring for coffees from Lintong Nihuta, North Sumatera, Indonesia. Lintong Nihuta is located about south of Lake Toba. To get there by car, it takes about 6 hours from City of Medan, the capital of North Sumatera. Lintong Nihuta is in region of Humbang Hasundutan which part of National Food Estates. The President of Republic of Indonesia, Mr. Joko Widodo visited the region last October 2020. There will be 30K Ha dedicated for the food estates.

Bayu, Leader of Himpunan Kopi Indonesia roasted the coffee with inner power style on 11 Dec 2020. Steve reviewed the Lintong with SCAA cupping protocol. The cupping notes were woody & nutty as fragrance, brown sugar & ginger as aroma, brown sugar & woody as flavors, medium acidity, sweet, good body, pleasant, clean & warm ginger as after taste.

Steve asked Dian, Roaster of Kopi Presiden to review the coffee together. Dian brewed it with clever dipper and paper filter. Steve brewed it with Moka pot. They both enjoyed the coffee and had fun brewed it. They experienced two different profiles from one coffee by brewing it with different brewers. The Kamus Kopi score was 94.

Kamus Kopi received hand gift from Hidayat family. They just returned from Labuan bajo. During their trip, they visited the village of Todo and received this coffee.

Todo village is located in the region of Manggarai, Flores island, Indonesia. It is recorded in history that the center of Manggarai kingdom was at Todo village. The ancestors of Todo clan were from Minangkabau, an area in West Sumatera, Indonesia. And to protect the royal clan housed at Todo village, the village was quite closed for outsiders. However, nowday, the village is quite open. Tourists can visit Todo village by following the village rules. Coffee is major part of Todo clan's culture. The Todo clan offers tourists to try their coffee for free.

Steve reviewed the coffee. The original packaging was plastic transparent bag. The coffee color was about Italian roast. And the coffee was fine ground. Steve cupped 5 cups. The cupping notes were earthy & smoky as fragrance, earthy& sweet smoky as aroma, earthy, dark choco & green leaves as flavors, uniformed, cleaned cups, enough body, balanced and sweet aftertaste.

Steve asked Bayu to review it together. Steve brewed the coffee with Ibrik pot. He brewed it with different water ratio. On the second brew, he added some sugar. They were satisfied and felt lucky to try this traditional coffee. The Kamus Kopi score was 89.

Review on Malabar arabica of Indonesia

Kamus Kopi received a anonymous package of coffee. It was a bag of coffee produced by Kieta Coffee.

Malabar is a volcanic mountain located in southern of City of Bandung, West Java, Indonesia. This mountain is part of Java Preanger which known as the early plantations by Dutch colonization at around late of the 16th. Now, Java Preanger is part of intellectual property rights of Indonesia since 2012.

From Kieta's online store at Tokopedia, it stated that the coffee was from multivarieties and processed through black honey method. Steve reviewed the coffee. He noticed the proper packaging for the coffee. He suggested to add more information on the packaging such as net weight of the coffee, production numbers, health permit and Halal certificate.

Steve cupped the coffee with cupping protocol of SCAA. He got woody & nutty as fragrance, woody & tumeric/cinnamon as aroma, lemon fruity as flavor, medium high lemon acidity, medium low body, medium sweet and nice short after-taste.

Steve asked Dea, Roaster from Kopi Presiden to review the coffee together. Dea brewed with clever dipper and paper filter. Steve brewed with ceramic dripper and paper filter. They both enjoyed the coffee and agreed on the level of acidity and lemon flavor. The coffee got 89 on the Kamus Kopi score.

Kamus Kopi received a package from Mrs. Meirina Chandra. There were about 4 sets of coffees inside the package. The coffees were produced by The Ruteng Women Manggarai (Flores - NTT) and guided by The Good Shepherd Sisters. Steve picked one set for this review. It was Juria arabica coffee.

Juria coffee can only be found at the highland of Colol, region of East Manggarai, Indonesia. The trees were planted around 1950 originally. And until today, most of the trees are still the original trees planted around 1950. Since the locals treated the trees sacred, the trees grow organically and reached about 5 meter untouched. The post harvest process is full washed. According to Mrs. Meirina, The Good Shepherd Sisters is missionary group in Flores. And one of their missions is to serve local women and children. Beside raise awareness about human trafficking, they also empower the women to raise their livings by processing the local resources including coffee.

Steve reviewed two bags of Juria coffee. The first bag that roasted by The Ruteng Women Manggarai and second bag roasted by Bayu, The Leader of Himpunan Kopi Indonesia. The cupping notes for the first bag were choco and earthy as fragrance, brown sugar as aroma, brown sugar as flavor, medium low acidity, almost uniformed, sweet and nice aftertaste. The cupping notes for the second were woody, nutty and earthy as fragrance, brown sugar and nutty as aroma, fruity and brown sugar as flavors, medium acidity like pineapple, sweet, uniformed cups and pleasant aftertaste.

Steve brewed the second bag with ceramic dripper and natural paper filter. Steve also asked Bayu to review it. Bayu got the brown sugar, medium acidity and medium body. Steve and Bayu enjoyed this specialty and heritage coffee. The Kamus Kopi scores were 90.5 and 93 for first bag and second bag accordingly.

Since it still in holiday season, Steve reviewed coffee related with the holiday spirits. Steve received a holiday package from friends, Cyn and Eddy. Inside the package, there were many items, cookies, candle light and coffee bags.

The coffees were made by Magys coffee. First bag was labeled as Joyful blend and Indonesia as the origin. The second bag was labeled as Warm Your Soul blend and also Indonesia as the origin. They both packed in small standing pouch bags for about 100 grams capacity. The bags and labels had good designs and suitable for food products. It just too bad that Steve could not get any more info on the coffees, not even at the Magys's website.

Steve reviewed both of the coffees with SCAA cupping protocol. The cupping notes for Joyful blend were chocolate and herbal as fragrance, dark choco as aroma, brown sugar, citrus, vinegar and fruity banana as flavors, medium high acidity, good body and hint of tannin as after taste. The cupping notes for Warm Your Seoul blend were woody, caramel and green as fragrance, woody and nutty as aroma, woody, rubbery and nutty as flavors, medium low acidity, nutty and medium long after taste.

Steve confirmed them by brewing the coffees with second method, dripper and paper filter. Steve also asked Bayu to review them. The Kamus Kopi scores were 92.5 and 91 for Joyful and Warm Your Soul. Happy Holidays

Kamus kopi received a coffee package from Mr. Fajar. Inside there were two bags of green beans, arabica and robusta from Pupuan, Tabanan, Bali island, Indonesia.

In early of the 14th century, Bali was managed by several Kingdoms. The Kingdom with largest population was the Kingdom of Tabanan. It was led by King Arya Kenceng. He shared the same mission with the Famous Prime-Minister Gajah Mada of Majapahit Empire (The Largest Empire in Asia which Capital City was in Java island, Indonesia.) Their mission was to unite the archipelago of Nusantara.

Tabanan (Kab. Tabanan) is located at the Southwest of Bali island. It has various elevations and spreading from the coast (at the south) to the mountains (to the north) Pupuan area is located at the north of Tabanan and at the foothill of Mount Batukaru. The location has lots of rain and good contours. It is perfect for farming. After rice paddy, coffee is the next major commodity that flourish in Pupuan. Fajar sourced the beans from his Boss, Mr. Ketut. Mr. Ketut has coffee farm in Pupuan. The farm is about 170 ha with the highest elevation of 1879 masl. The harvest season is July - August.

Steve reviewed both of the coffee (arabica and robusta) together. The arabica had cupping notes of woody and choco fragrance, brown sugar aroma, brown sugar, earthy and flowery flavors, tangerine acidity, sweet, hint of tannin after taste and very well balanced coffee. The robusta had notes of woody and nutty fragrance, woody, earthy and nutty aroma, woody, rubbery and nutty flavors, medium low acidity, sweet, hint of vinegar aftertaste and balanced coffee. Steve confirmed the arabica by brewing it with dripper and titanium filter. The Kamus Kopi score were 92 and 89 for arabica and robusta historically

Kamus Kopi received a set of Bengkulu coffee (green beans and roasted) from Mrs. Santi (PT Jaya Perdana Komoditi) The region of the coffee was from Rejang Lebong. It was not just regular coffee. This Bengkulu cofffee received awards on 3 categories from AVPA (Agency for the Valorization of the Agriculture Products) in 2019.

Bengkulu is a province and located at the south west of Sumatera island. It is currently the third largest robusta producer in Indonesia. Rejang Lebong is a region in the Bengkulu and located in the east side from the City of Bengkulu (Capital City of Bengkulu.) Rejang Lebong was recorded to have about 23K ha of coffee farms which produced about 17K ton of beans (from 55k ton total production in Bengkulu.)

Mrs. Santi sourced the beans from a small farm in Rejang Lebong. The farm is about 2.5 ha and located at 800 masl. Mrs. Santi worked together to process the best practice of coffee processing. It started with pick the red cherries only. It dried them up on the drying tables. And hand sorted the beans to the International Standard.

Bayu, Leader of Himpunan Kopi Indonesia helped by roasting the green beans to the City roast on 22 Dec 2020. The next day, Steve reviewed the coffee with International cupping standard. Steve noticed the differences between coffee roasted by Bayu and provided by Mrs. Santi. First, the outside color of two batches were different. Coffee provided by Mrs. Santi was roasted to the color of French roast. Second, the flavor and acidity were higher at City roast. Third, the sweetness was higher at French roast. Fourth, the rubbery flavor was lower at the French roast. However both coffees got about equal of Kamus Kopi score, 90.

Kamus Kopi received a package from Redo coffee. It consists of green beans and roasted coffees from the northest part of Indonesia, North Sulawesi.

Around the 19th, the Dutch invaded Indonesia. Since coffee was one of the most wanted commodities, the Dutch planted coffees in North Sulawesi too. However the farmers abandoned the plants when the Indonesia declared independence. This was to show their rejection to the invasion. The farmers only kept some of the plants for personal consumptions. Just around year of 2000, the Indonesian goverment started a mission to revive the coffee in North Sulawesi again. Redo worked in the same mission together with local goverment and farmers.

Redo sourced the best beans directly from area of Modayag which located at the foothill of Mount Ambang in the region of Bolaang East Mongondow, North Sulawesi, Indonesia. This is how City of Kotamobagu traditionally received supply of coffee. The elevation of Modayag is about 175 - 1100 masl. The robusta harvest season is usually almost whole year (Feb - Dec.) And the robusta in Modayag is now about 3000 ha (from 7000 ha total in North Sulawesi.)

Steve reviewed the coffee. And he was amazed with the dark choco and hint of smoke as fragrance, smoke wood as aroma, brown sugar and dark choco as flavors,

medium low acidity, broad body, sweet, and lingering smoky wood after taste. He confirmed it by brewing it with dripper with gold plated filter. Bayu gave some comments also on the coffee. Kamus Kopi score was 93

Kamus Kopi received two big bags of coffees, Gayo arabica and Mandailing arabica. Steve picked the Gayo for this review. And he kept the Mandailing for other time.

Gayo is an area which located in the north of Sumatera island. The Gayo tribe lives in the Gayo area. There are three regions in Gayo area, Kab. Bener Meriah, Kab. Aceh Tengah and Kab. Gayo Lues. The coffee plants are mostly concentrated around the Gayo highland which is around the Lake Tawar (Lut Tawar.) Since the elevation is high (more than 1100 masl) and very fertile, the area is good for Arabica. There are many varieties of arabica in Gayo including Sigararutang, Typica, Catimor and Lini S. Now, Gayo also has its own varieties, Gayo 1 and Gayo 2 which has been certified with the geographical indication. The plants produce two harvest seasons, Jan - April and Sep - Oct. With the production of about 94,600 ton annually, Gayo is the biggest arabica producer in Indonesia.

Janji Maria roasted the Gayo with VNT roasting machine to the color of Full City roast on 9 Dec 2020. About 12 days after roasting date, Steve reviewed the coffee on the 21 December 2020. Steve said the coffee smell still fresh. That means the coffee bag did very good job in protecting the coffee beans.

Steve reviewed the coffee. He analized the beans, and guessed that the beans roasted with Santuy style (slow roast.) He cupped the coffee. He got choco and fruity as fragrance, brown sugar as aroma, fruity and brown sugar as flavors, low to medium acidity, heavy coating body, hint of choco after taste and very well balanced coffee. Steve reviewed it by brewing it as espresso with Delonghi Eletta. He noticed the thick crema strong flavors on the espresso. He also mentioned the higher acidity in espresso than in black coffee (cupping style.) To sum up, it was a specialty arabica from Gayo, Indonesia.

Sindoro Natural Arabica & Sumbing Natural Arabica - AWRA coffee - 2 Nov 2020

Kamus Kopi received a package of 4 coffees from AWRA coffee. One bag, Gesing "Choffee" Natural Robusta had been reviewed on 7 Dec 2020. Now Kamus Kopi reviewed 2 more bags, Sindoro Natural Arabica and Sumbing Natural Arabica.

Sindoro is a volcanic mountain in region of Temanggung, Central Java, Indonesia. The mountain's peak is about 3153 masl. And Sumbing is one of the highest mountains in Java (about 3371 masl) and still active volcanic. It is located about southern part of Sindoro. AWRA coffee has been working closely with the local farmers since 2020. They picked the red cherries only. And then, they processed and sorted them properly. They roasted the coffees at experienced roaster to the color of City roast on 2 Nov 2020.

At the beginning, Steve reviewed just the Sindoro with cupping protocol. However, after Steve checked the map of Sindoro, Steve decided to reviewed the Sumbing together at the same time. The cupping notes for Sindoro were choco fruit as fragrance, brown sugar with fruity aroma, pineapple acidity and hint of flower after taste. The cupping notes for Sumbing were Choco, Woody as fragrance, Woody aroma, Woody fruity as flavors and medium acidity. It just the Sumbing has un-uniformed cups.

Steve asked Bayu to review the coffees together. They brewed them with two french-presses. Bayu commented that the Sumbing had stronger aroma. And the Sindoro had stronger flavor. Steve and Bayu agreed that they both were specialty coffees. The Kamus Kopi score were 95 and 90 for Sindoro and Sumbing respectively.

Kamus Kopi received a coffee bag from Coffee of Things. It was a houseblend of arabica named as Tondi. The coffee were roasted by Mr. Sudiarso /Acoy on 16 November 2020 with Norcoffeeroaster roasting machine.

The houseblend was a unification from two major islands in Indonesia. To be more specific, it was a blend of Jumaraja-Tana Karo and Cikuray-Garut. Tana Karo is a region in Northern part of Sumatera island. The village of Jumaraja is located inside Tana Karo region. It guarded by two active volcanic mountains (Sinabung and Sibayak) and beautiful lake of Toba. The elevation is about 1400 masl. And Garut is a region in the South west part of Java island. The village of Cikuray is located south of the Garut region with elevation about 1400 masl. Further south of it, we can find Indian ocean.

Steve reviewed the coffee with cupping protocol. Steve guessed that Mr. Sudiarso did pre-blending technique for this Tondi houseblend. This pre-blending is explained further in Steve second book, Menyangrai itu Menyenangkan. The cupping notes were nutty, choco and earthy fragrance, brown sugar aroma, caramel and woody flavors, bright medium acidity, nice lingering fruity after-taste, sweet and very balanced coffee.

Steve asked Intan, Accountant of PT Selera Indah Perdana to review and to enjoy the coffee. Steve brewed it with Suji dripper and paper filter. Intan said she enjoyed the coffee so much. Kamus Kopi score was 95.

Kamus Kopi received Flores Bajawa coffee from Nagadi coffee. The Bajawa coffee has been well known as good arabica from Indonesia. The Bajawa itself has two meanings, peaceful plate and Java plate. And it was originated from the name of the biggest village (Nua Bhajawa), out of seven villages in the region. According to Wikipedia. In Bajawa, there are many breath-taking sceneries and reserved traditional homes such as in Ngada village.

Nagadi coffee sourced the beans directly from Fa Masa, Wongawali & Maywali. The plants' cultivar was S795 and planted at altitude of 1200 - 1600 masl. The beans were processed with full washed method. Then got roasted on 2 November to Full city roast with Diedrich roasting machine.

Steve reviewed the coffee with cupping protocol. He got nutty and herbs as fragrance, molasses as aroma, brown sugar flavor, medium acidity, apple cider after taste and balance profile. Steve reviewed it again with second method of brewing, dripper and titanium filter. When Steve prepared the brewer, Mr. Dadan walked into the room.

Mr. Dadan is the head of Manglayang (coffee farmer group.) He is also the leader of Java Preanger Association. Steve asked Mr. Dadan to try and to give comments on the coffee. We were lucky to have Mr. Dadan at this review. Mr. Dadan enlighted us about coffee plant's varieties and cultivars. Mr. Dadan confirmed that this Flores Bajawa was specialty coffee. Kamus Kopi score for this Flores Bajawa was 95.

Reviewed the "hidden-village" coffee from Indonesia. Kamus Kopi received two bags of green beans from Ibu Anni Sugandi of Lezzate. They were beans from a small village surrounded by mountains. The village name is Tempur, located in region of Jepara, Central Java, Indonesia. In the bag's label, it stated as Kopi Tempur, Full wash, processed by Gapoktan Sido Makmur. And the other bag's label was just stated as "wine." There was no further information about the variety nor the cultivar of the coffee.

Steve roasted the beans with Probatone 1 to the color of City plus on the 8th. About 6 days after roasted, Steve reviewed those two coffees together. First, Steve reviewed them with SCAA's cupping procedure. For the full wash, the cupping notes were earthy &herbal fragrance, woody aroma, choco flavor, medium light acidity, sweet and woody aftertaste. For the wine, the cupping notes were deep ripe fruity fragrance, herbal aroma, herbal and green flavors, low acidity, lingering aftertaste.

Steve brewed the full-wash with Delonghi Magnifica machine as espresso and cappuccino. Steve asked Chery, Admin of PT Selera Indah Perdana to review the coffee together. Chery enjoyed the cappuccino more than the espresso. Steve confirmed the Kamus Kopi score were 90 and 87 for the full wash and wine respectively.

Kamus Kopi received a package of 3 coffees from Best Coffee Indonesia. Kamus Kopi chose one bag labeled as the Mandailing arabica for this review. The other two bags were still green beans. Best Coffee are coffee traders that engaged directly with coffee plantations in Indonesia. Best Coffee offers varieties of Indonesian coffees which can be group as arabica and robusta.

The Mandailing beans were sourced from North Sumatera, Indonesia. The post harvest was semi washed which is classic for Sumatera arabica. This semi wash process is very unique, and bring balance acidity and nice body in the coffee profile. This Mandailing beans has been sorted out as grade 1. And Best Coffee roasted the beans with Hartanzah roasting machine to the color of Cinnamon roast which is favorite roast among modern Millenials.

Steve reviewed the beans with SCAA cupping protocol. He commented on the packaging and roasting profile. He suggested to use jurus of Ngebut Kilat especially for light roasts. He got nutty and woody as fragrance and aroma, tamarind and brown sugar as flavors, bright acidity, hint of tannin & green in after taste.

Steve confirmed it by brewing it with dripper and Titanium filter. While prepared the brewing water, Steve knocked over the brewer..clumsy Steve. Steve continued the brewing process. Since nobody around, Steve enjoyed the coffee by himself. And he confirmed that this Mandailing got 94 as Kamus Kopi score.

Kamus Kopi received a package of coffee (consists of 4 bags) from AWRA coffee. At this video, Kamus Kopi reviewed a bag which labeled as Gesing Natural Robusta.

Gesing is a name of village in the northern part of Temanggung, Central Java, Indonesia. It has elevation about 600 masl which is ideal for robusta plants.

AWRA coffee sourced and processed the beans directly in Gesing. They worked together with farmers to develop higher quality of beans. Since 2020, they started with their campaign of pick red cherries. Not only they control the post-harvest process, they make sure the beans properly roast at their trusted and experience roastery.

Kamus Kopi reviewed the coffee. Steve gave comments on the packaging and beans' aromatic compounds. Steve amazed with the coffee profile. He got nutty fragrance, brown sugar aroma, chocolate flavor, nice acidity and hint of flower after taste. These were uncommon profile for robusta.

Steve confirmed it by brewing it with Flair espresso. At his third espresso pull, Steve asked Chery to join and to enjoy the coffee together. Steve confirmed that the Kamus Kopi score for this Gesing Robusta was 95.5

Not many people ever heard the name of Gesing village. But they should remember the name after they drink this delicious chocolate coffee, choffee.

Kamus Kopi received a package of specialty houseblend from Beanslokal. Inside, there was a bag of coffee labeled with MTK. It stands for Mamasa, Tolu and Kerinci. Those names are reffering to the regions in Indonesia and to the names of indigenous people live inside the regions. Mamasa is located about west part of Sulawesi island. Tolu is located about the northern of Sumatera island. Kerinci is located about the western of Sumatera island.

Beanslokal itself is a roastery in Cibubur, West Java, Indonesia. They also own a coffee farm in Toraja, south east neighbour of Mamasa, Sulawesi. Beanslokal utilized William roasting machine to roast this MTK blend to the color of City roast.

Steve reviewed the coffee with cupping protocol from SCAA. He got nutty fragrance, fruity aroma, apricot flavor, sharp pineapple acidity and lingering aftertaste. Kamus Kopi score was 96.

Steve asked Dian to brew and to review the coffee together. Dian brewed it with Suji dripper and paper filter. Steve brewed it with Suji dripper and glass filter. Using the same water ratio and temperature, the result was quite interesting. When Bayu stepped into the room, Steve also asked him to join and to review the coffee together. They all agreed that MTK was a specialty houseblend arabica.

Tesa Natural Arabica - Ba'Heula Kopi - Oct 2020

Kamus Kopi received three bags of coffees from Ba'Heula kopi. Kamus Kopi had reviewed the two bags already. Now, Kamus Kopi reviewed the third bag, Tesa Natural arabica.

It was stated that the beans were from their own farm. The farm (about 10 Ha) is run by Mr. Odo and Mr. Andi (farmers) Their farm is located between Sukasari (area near Cimahi) and Tanjung sari (area near Sumedang) in Prov of West Java, Indonesia. The elevation is about 1340 - 1500 mdpl. The main varietal is Tim- tim. And the harvest month is around May.

Ba'Heula kopi roasted the beans very slowly with Nor roasting machine. This is similar to Santuy technique/ style in Steve 2nd book, Menyangrai itu Menyenangkan. They roasted the beans about 16 minutes to the color of City roast.

Steve reviewed about packaging more detail in this video. Steve gave some points on good packaging.

Steve wrote cuping notes of fruity, brown sugar with flavors of apricot, bright tamarind acidity and uniformed cups.

Steve asked Bayu, Leader of Himpunan Kopi Indonesia to brew the coffee together. Each of them used different kind of filters. Steve utilized the Titanium coated filter, and Bayu utilized the white paper filter. They both used the same water ratio and temperature. So we can say that it was a battle of metal vs paper. It is interesting with the results.

Kamus Kopi received green-bean arabica (with honey processed) from Kopi Padukuhan. Kopi Padukuhan is a coffee farmer in the village of Karyamukti, Kec. Cibatu, Kab. Garut, West Java, Indonesia. The village is located at altitude of 1400 -1600 masl of Mount Sadakeling. The farm is run by Mrs. Herlina. She stated that there are about 35K coffee trees in her 7 Ha farm. The varieties are arabica of Kartika, Andungsari and Sigararutang. Most of the trees were planted in 2015. And the first harvest was in 2019. In 2020, the harvest was from about 70% of the farm trees. The harvest months are usually in June - July. The main post harvest of this farm is honey process.

Steve roasted the green beans in Probatone 1. He utilized Tenaga Dalam (Inner Energy) technique to reach the color of Full city. After got rested about 30 minutes, Steve reviewed the coffee with cupping protocol. While cupping, he also brewed the coffee with Osaka dripper. He asked Intan to comment on the coffee. Intan could not describe it much (we need to understand that she is an accountant) but most important she enjoyed drinking the coffee. That showed the coffee was easy to drink. The coffee notes were brown sugar, sweet caramel, tamarind flavor, bright acidity and lingering after taste. It is a well balanced coffee. It was not just because Steve utilized Tenaga Dalam technique in roasting the coffee. But also these Garut arabica from Padukuhan farms were processed well and provide great profile. Please keep an eye for this new candidate from Garut, West Java. Kamus Kopi score was 95.5

Kamus Kopi received 2 bags of Bali roasted coffees from Lumbini Coffee. Bali is World recognized as one of the paradise islands in Indonesia.

Lumbini Coffee is a roastery in Ubud, Kab. Gianyar, Bali, Indonesia. They sourced their coffee from their family-owned farms in Kintamani, Kab. Bangli, Bali. Kintamani is located at northern of Bali island. In the east of Kintamani, there are giant wall of Mount Batur and caldera pool of Lake Batur. The location (with elevation of 1300 - 1600 masl) is suitable for coffee plants. The volcanic soil and high altitude provide good combination for Bali arabica. Coffee harvest is around June - August.

In this video, Steve reviewed both of the coffees, Natural Process and Luwak Process. Steve cupping notes for Natural are fruity, nutty, molasses with lemon and flowery flavors, bright acidity and smooth after taste. The notes for Luwak are earthy, woody, pineapple, lemony flavors with tamarind acidity and hint of tannin after taste. Kamus Kopi scores for Natural and Luwak were 98.5 and 97

Since it is stated that the coffees are good for espresso, Steve and Chery reviewed them by brewing the Natural process with La Marzocco "GS3" espresso machine. Chery enjoyed the coffee especially when it got brewed as cappuccino. And Steve enjoyed it more as black coffee.

Reviewed on World-Famous Coffee, Wild Luwak from Indonesia. Kamus Kopi received a box of Luwak beans from Mr. Egi Mepa (Ficus Coffee). Mr. Egi sourced it from his area, village of Gunung Aji, Kec. Kikim timur, Kab. Lahat, Prov. South Sumatera. The beans were still in parchment form. Steve and Bayu had to process it further before this video start recording. They peeled off the beans from their endocarp. Then they dried the beans up to reach moisture level of 14%. Steve roasted the beans with WexSuji 100 to the color of City plus roast. Steve utilized Santuy technique/style. He explained and demonstated this Santuy style in this video. After the coffee got rested about 30 minutes, Steve reviewed the coffee. The cupping notes were nutty, woody, rubbery with medium acidity. The Kamus Kopi score was 92.5

Kamus Kopi received a bag of coffee from anonymous sender. It was a New Normale from Hope Kopi with roasted date of 16 September 2020. When we contacted Hope Kopi, they confirmed that New Normale was one of their products. According to Hope Kopi, the beans were blended of Arabica and Robusta. They sourced the arabica from West Java, and the robusta from Central Java. With their special recipe, they blended the beans together. They roasted this coffee for espresso based of drinks.

Steve reviewed the coffee on 27 Nov 2020. Even after more more than 2 months, the coffee was still smell good. That showed proper packaging. Steve explained about the term of Houseblend. Steve already explained the technique to make houseblends in his second book, Menyangrai itu Menyenangkan. Steve referred to jurus Gado-Gado as the guidance to make houseblends. The goal of Gado-gado technique/ style is to make a complex / unique of coffee profile.

Since this New Normale was for espresso based, Steve brewed some espressos in Delonghi espresso machine. Bayu, Leader of Himpunan Kopi Indonesia also got chance to reviewed the New Normale.

Reviewed one of "trending" arabica from Indonesia, Aceh Pantan Musara.

Kamus Kopi received this arabica from Nagadi coffee.

Pantan Musara is a remote village in Kec. Pegasing, Kab. Aceh Tengah, Prov. Aceh, Indonesia. This village is still part of Gayo mountain region. It is about 14 hour driving from Medan, North Sumatera, and about 2 hour driving from Takengon, Aceh (nearest airfield.) The elevation is about 1500 -1800 masl. The main job in the area is coffee farming. The main harvest is usually from September to December, with fly crop around May.

Nagadi chose the full washed process for this Pantan Musara arabica. Then Nagadi coffee roasted the coffee to the City roast with Diedrich 12 on 2 November 2020.

Steve reviewed the coffee about three weeks after. Steve cup the coffee with SCAA standard cupping procedure. He got nutty, fruity, brown sugar, black tea flavor with pineapple acidity. Kamus Kopi score was 99.

Dea and Steve confirmed it by brewing it as espresso and cappuccino.

Kamus Kopi received a box package from Mr. Egi Mepa with Ficus coffee. There were many bags of green beans in the box. Kamus Kopi chose Semende arabica to be reviewed first. Semende is a name of a region in Kab. Muara Enim, Provinsi South Sumatera, Indonesia. The mountain line of Bukit Barisan crosses in the Semende region. Bukit Barisan itself stretch from Aceh (the northest part of Sumateran island) to Lampung (the southest part of Sumatera island.) Semende tribe lives in the Semende region. Since the region is located at high elevation about 800 - 1300 masl, the region is fertile for arabica and robusta. The main harvest is around July to August.

Bayu, Leader of Himpunan Kopi Indonesia roasted the beans to the color of Full city roast. After more than 2 days, Steve reviewed the coffee. As expected from Natural process, the cupping notes were ripe grapes, pineapple acidity, sweet, uniform and good balance profile. Bayu also got chance to review the coffee with paper filter. Bayu and Steve enjoyed drinking the coffee. The Kamus Kopi score was 97,5

Kamus Kopi received a special package from the very east of Indonesia, island of Papua. The packaged sent by Mr. Guruh Teguh (Anmeke Coffee.) He is a coffee roaster in Wamena, Papua, Indonesia. He collected the beans from mountain coffee farms. The farms do not have the capabilities to process the beans themselves. Mr. Guruh helps these farms by collecting their harvest and processing them. The main harvest is around July, with fly crop in February.

Now Mr. Guruh try to add the value of the beans by roasting them. He roasted the beans with non motorized of metal drum. He cracked up the drum by hands. And he utilized a stove bruner as heat source. He admitted he still in learning process. Thus he asked Kamus Kopi to review and to give some guidance.

Steve opened the package, and found two bags of coffee. One bag is written as coffee from Tiom, Kab. Lanny Jaya, Papua. And another one is from Kurima, Kab. Yahukimo, Papua.

Steve reviewed both of the coffee in this video. Steve enjoyed sipping the coffees. The cupping notes were Brown sugar, Earthy, Cinnamon, Sweet, good Body and nice Acidity. The Kamus Kopi score was 99 for Kurima, and 100 for Tiom.

Steve confirmed it by asking Dian, Roaster of Kopi Presiden to brew it with Osaka gold filter. Dian also enjoyed the coffee ��

Reviewed on one of forest coffees from Indonesia. Kamus Kopi received a package from forest farmer, Mr. Wanuri. His farm is in Rowo village, Kecamatan Petungkriyono, Kabupaten Pekalongan, Provinsi Central Java, Indonesia. And it has elevation about 1200 - 1600 masl. According to Mr. Wanuri, his farm is located at the lush tropical forest. There are still abundant varieties of flora and fauna in the forest. And in regards of coffee varities, the majority are catura, sigararutang, andungsari and typica. His farm size is about 2 ha. And the harvest season are from March to July.

Bayu, roaster from PT Selera Indah Perdana helped to sample roast the beans to the color of Full City.

After about 2 days, Steve reviewed the coffee. He got the fragrances of earthy, dark choco and herbal. He also tasted brown sugar flavor with balanced acidity and sweetness. The Kamus Kopi score was 97.

Kamus Kopi received a package with no name. Inside, Steve found Gayo wine coffee roasted by Mr O Coffee. According to the label, the beans were from sourced from Permata area in city of Bener Meriah. It is located about 1300 masl of the Gayo highland, Aceh, Indonesia. The post harvest process is wine process. This wine process is what the millennials love to drink. They enjoy the flavors that similar to wine beverage but without the alcohol content.

The coffee roasted to color of New England roast on the 16 of November 2020.

Steve reviewed the coffee with cupping protocol. And then he confirmed it with Chemex brewer. Bayu, leader of Himpunan kopi Indonesia, also got chance to enjoy the coffee and gave his comments on the coffee.

With only that much, Steve confidently chose WexSuji roasting machine to roast the green sample. Steve explained briefly how he operated WexSuji for sample roasting. Psst..if you guys notice, Steve used jurus (style) Tenaga dalam when he roasted with WexSuji. He roasted the Mandheling to City roast. Steve also explained on how to operate Sinar agripro to measure moisture level of the green beans.

After cooling it for about 15 minutes, Steve cupped the coffee. Cupping notes were herbal, sweet caramel,sugar brown and balance profile. Kamus Kopi score was 95.5

Reviewed on one of specialty houseblend. The coffee roasted by PT Herbal Globe Natural / Hope kopi to the color roasting of City plus in Aug 2020.

The beans were from farms in Pengalengan, West Java, Indonesia, and processed through a special post harvest method, Pura Cepa. According to our friend in Hope kopi, Fery, this process is similar to honey process. And it was inspired from the process in wine making. It utilized bacteria during the fermentation.

Steve explained briefly about similar processes of Pura Cepa in this review video.

Hope kopi utilize Diedrich roasting machine to roast this coffee to reach "espresso" profile.

Therefore Steve brewed this coffee with Delonghi espresso machine to review it.

The cupping notes were ripe fruity, hint of flower and tangy. The Kamus Kopi score was 96.5

Kamus Kopi received a package from Multi Niaga Indotama. They are coffee collectors/ processors in Muara enim. There were two bags in the package, Basemah robusta and Semende robusta.

Kopi Presiden roasted the Semende on 3 Nov 2020 to City roast.

After about 10 days, Steve reviewed the coffee.

Steve explained a brief about Semende coffee.

The farms are located in the region of Muara Enim, South Sumatera, Indonesia. Since the Semende tribe live in that area, people call it Semende land. The land itself is located at higher land and crossed by mountain line of Barisan. With these, the coffees from this region offer softer and fruity flavors. And the coffee is also known as Semendo coffee.

Steve reviewed with cupping protocol. And Steve was amazed by the potential, the sweetness and flavor of the coffee. The Kamus Kopi score was 95.

Steve confirmed it by brewing it again with Mokapot, and reviewed it with Dea, roaster of PT Selera Indah Perdana.

Good example of limited edition coffee from Indonesia. Kamus Kopi received specialty arabica from village of Eran Batu in area of Pulu - pulu, Buntu Pepasan, Indonesia. It is located at highest altitude of Northern part Toraja region, 1800 - 2100 masl (mdpl) in the island of Sulawesi (also call as Celebes in colonial time) The major varietals are Typica and Lini-S. At the harvest period (usually around December & January), the farmers were handpicked the red cherries. And then, they proccessed the beans with fully washed method.

Nagadi coffee roasted the coffee to Cinnamon color at 2 November 2020. Steve got chance to cup it. He perceived fragrance of nuts and sweet floral. The flavors were sugar brown and flowery with bright acidity and pleasing after taste. Steve and Octa confirmed all goodness by sipping its espresso and cappuccino. The coffee was great. Kamus Kopi score was 97.5.

Reviewed on specialty arabica. Kamus Kopi received three bags of coffees from Ba'Heula kopi. First bag was Wharika. It is their Houseblend with combination of Sukasari natural, Sukasari Honey and Halu Honey. It was roasted to medium roast, between Cinnamon and City colors. The second bag was Tesa Natural. And the third bag was Tesa Full washed roasted to almost City.

It was stated that the beans were selectively grown and processed by Odo and Andi (farmers) Their farm is located between Sukasari and Tanjung sari in region of Sumedang, West Java, Indonesia. The elevation is about 1340 - 1500 mdpl. The main varietal is Tim- tim.

Due to limited time, Steve reviewed two bags only, the Wharika and Tesa Full washed. Both of coffees were great. However the Wharika stand up more with Kamus Kopi score of 96.5 The Tesa had more acidity and nice after taste with Kamus Kopi score of 94.

Steve also reviewed it with Bayu. Steve used Rockpresso to brew the Wharika.

Review on Andong Sekarlangit roasted by Kipwa Coffee

Review on fine robusta from a farm in the village of Tlogorejo, the Andong mountain in region of Magelang, Central of Java. The farm is about 1 Ha. It has been operated for about 8 years. However only the past 2 years, they started to do post harvest process by themselves. In addition, now, they add the value of their coffees by roasting the coffees and distributing them to many cafes in Jogja and Semarang.

This farm is a good example of women owned company. Her name is Ms. Ratih Dwi Yunita Sari. And the company is now employing abouy 25 people.

Steve reviewed the coffees. The package was very complete. It came not only roasted but also bag and cakes.

Steve found the coffees has potential. It just need minor improvements. The cupping notes were nutty, apple vinegar and clean after taste. Steve also reviewed it with Flair espresso to confirm the taste.

The Kamus Kopi score was 88.5

Steve also reviewed them with second method, french drip. But Steve had problem when he tried to double up the dose of french drip.

Green beans sourced from a group of coffee farmers. Its name is Sams. It is located at Surian in region of Solok, West Sumatera, Indonesia. Farms elevation is around 1000 - 1600 mdpl. Most of the varietals in Solok are sigararutang, kartika, lini s. Total coffee farms were about 1000 Ha. The traditional post harvest in Solok is Natural. Steve did the review on the bag and beans. Then he sample roasted the coffees to City roast.

After the coffee got rested about 1 hour, Steve r eviewed the Solok Arabica. The coffee reviewed with cupping procedures. The cupping notes; sweet prune, medium acidity, sweet and nice after taste. The body was quite thick. It just need bit more in consistency. Overall it is one of Indonesia specialty coffees. Kamus Kopi score was 98.

Review on Cilibur Arabica roasted by Kopi Nyong - Oct 2020

Green beans were from farms village of Cilibur, in region of Brebes, Central Java. The farms are located about 750 mdpl. Roasted by kopi Nyong to City roast. Reviewed with cupping protocol. In addition coffee brewed with drip filter by Dea. Cupping notes; fragrance and aroma were dark choco and ripe fruit. Flavors were brown sugar. Body was medium. Packaging was good. Kamus Kopi Score was 95.
